I first started following recipes to make hummus but have made it so often I do it without measuring anything. I know what I like and what it should taste like so I just whack everything in a blender and taste as I go and adjust accordingly, if it needs a little more of anything.
I start with a tin of chickpeas, a tablespoon of tahini, juice of one lemon, some water (or the liquid from the tin of chickpeas) a clove or two of garlic depending on individual taste, a dash of cayenne pepper and a pinch of salt. I dump it all into a blender and once combined taste it and adjust it if it needs a little more of anything else. I always top my hummus with smoked paprika and fresh parsley.
So easy, so delicious and a must for the top of quinoa cakes.
